Bramblecrest Bakes | Make Kat's Easter Cake

When we’re not busy with garden furniture it would seem Bramblecrest plays host to some very talented folks. For our recent photoshoot we needed a showstopping cake centrepiece and there was no doubt in our mind who to call on. Our resident star baker (and Logistical Administrator) Kat Limbrick. Kat bakes cakes for her own cake business Kitty Wishes Bakery and when we asked for a semi-naked cake with blueberries, she more than delivered. The pretty finish and delicate flavours are perfect for any gathering over the easter weekend, so if you’d like to make your own version of Kat’s cake, here’s what you need to know.

Cake ingredients (Triple quantities to make a triple layer cake)

• 200g flour
• 150g sugar
• 200g butter
• 1tsp vanilla extract
• 2 tbsp golden syrup
• 1 egg
• 1tsp baking powder
• 100ml milk

Make your cake

• Preheat your oven to 180°C (350°F). Grease and line three 8-inch round cake pans.
• In a large mixing bowl, cream together the butter and sugar until light and fluffy.
• Add the eggs one at a time, beating well after each one is added. Then mix in the vanilla extract and golden syrup.
• In a separate bowl, sift together the flour and baking powder.
• Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until everything is well combined, and you have a smooth batter.
• Divide the batter evenly between the three prepared cake pans.
• Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
• Remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Buttercream ingredients

• 900g powdered sugar
• 450g butter, softened
• 3 tsp vanilla extract

Make your buttercream

• In a large mixing bowl, beat the softened butter until creamy.
• Gradually add the powdered sugar, one cup at a time, beating well after each addition.
• Add the vanilla extract, and continue to beat until light and fluffy.
 
Assembling the cake

• Once the cakes are completely cooled, place one layer on a serving plate or cake stand.
• Spread a layer of frosting on top of the first cake layer.
• Place the second cake layer on top and repeat the process of spreading frosting.
• Finally, place the third cake layer on top and frost the top and sides of the cake with the remaining frosting.
• Add chocolate shavings, fresh fruit, or any other toppings you like.
